This place was a great find that we stumbled upon as we meandered through the Pike Place Market early on a Sunday morning. At first, we almost walked right by, because we figured the dry pasta so nicely displayed in dozens of varieties (including chocolagte) was all full of gluten. But around on the other side, separated from the gluten pasta, were about 10 unique varieties of GLUTEN FREE PASTA! Awesome! It's made from a combination of rice, corn, tapioca, and quinoa flours, so it "holds up" better than regular rice pasta, for example. And the varieties were each tastier sounding than the next (Chipotle Lime, Lemon Parsley). Ultimately, we chose to get ¾ pound of both the Lemon Pepper fusilli and the Garlic Chive rooster comb pasta. The man helping us used clean disposable plastic gloves when scooping the pasta into the bags. It wasn't cheap ($14.00 per pound -- like an expensive specialty coffee!) but worth it for a special treat. We made the Garlic Chive variety tonight, and it was delicious -- not a strong flavor, but subtle, and it held up really well when cooking. Just keep checking it after 10 minutes to see when it's done. For us, it came out perfect al dente! It's available to order online, too, so we may be ordering more...it would be fun to try more flavors.
