We tried this relatively new pizza place last night after receiving a flyer in the mail and seeing that they offer gluten free crust. Upon arriving, I asked to talk to the manager. They were VERY busy, as it had snowed, and a lot of people were ordering pizza delivery for that night! However, the manager took the time to talk to me and assured me they take the pre-made gluten free crust, put it on a clean pan reserved for gluten free pizzas, and then use a clean pizza cutter to cut the pizza once it's done. They said they even use a clean ladle for the sauce. When I asked if it would be possible to use "fresh sauce" (that hadn't been double-dipped into with the ladle that had spread the sauce on normal pizzas), they were happy to oblige. I don't think they typically do this, but if you ask nicely, they probably will (they even did it for us when they were busy, since I explained our son has Celiac). They were very, very nice here. It is a franchise, so the procedures and care probably vary from location to location. But I can recommend this location, and the pizza was really good (good crust). My son only ordered a plain cheese pizza, so we forgot to ask which toppings were gluten free (or if there were any that aren't). I'd recommend giving this place a try...I just recommend calling ahead or talking with the owner or a manager upon arrival if you are gluten free for medical reasons.
