When I first moved to Raleigh from the Seattle area 4 years ago, I thought I'd never find a local roaster that could match what I was used to getting back home. I tried several different grocery stores and a number of local Raleigh coffee roasters, but 8th Sin was the only one that truly does what they say - provide FRESH coffee.
In stores like Whole Foods you can go look in their coffee section and see some of the other local roasters, and their "best by" date is sometimes 10 to 12 months from now! That's just asinine. Anyone who KNOWS about coffee is aware that it should be consumed with a few weeks of the roasting date. Otherwise you might as well get Folgers.
That's why I buy directly from 8th Sin. They don't roast it until I order it, and I can pick it up at their roastery a day or two later. Now THAT is fresh coffee!
