I like to eat at Margaret's Cantina because I can find gluten-free dishes designated on the menu. Better yet the food is fresh, locally grown, and wonderful.
Lunch is served M-F 11:30 a.m. until 2:30 p.m. (v=vege, vv=vegan, gf=gluten-free). There are Lunch Specials which are always available and Daily Lunch Specials available only on designated days.
The six $ 7 Lunch Specials include:
¡Uno! One Enchilada Plate - Stuffed soft corn tortilla smothered in melted cheese and mild salsa roja or spicy verde. Choose one filling: chicken, shredded beef, shrimp, black beans, colache, seasoned cheese mixture, spinach or tempeh. Served with Spanish brown rice and black beans topped with sour cream, garnished with lettuce and jicama-radish slaw. v, gf
¡Dos! Soup or Salad Combo - A bowl of chicken chowder or black bean chili and . . . a Cantina salad or grilled cheese pita or flour tortilla with melted cheese. v, gf (no pita or flour tortilla)
¡Tres! Vegetable Plate - Choose any three: Southwestern grits, black beans, colache, Spanish brown rice, cole slaw, fresh-cut fries, green beans, or a small Cantina salad. v, gf
¡Cuatro! Rotisserie Chicken - 1/4 dark (leg and thigh) rotisserie-roasted with Margaret's seasonings and finished on the grill. Served with BBQ, blue cheese, hot wing or Greek sauce and one side dish (See vegetable plate above for choices.) v, gf
¡Cinco! Hummus Plate - Garbanzo and tahini dip served with grilled pita and crisp veggies. vv
¡Seis! Large Cantina Salad - Crisp romaine and iceberg lettuce, carrots, cucumbers, cherry tomatoes, sweet peppers, red onion, boiled egg, shredded cheese and choice of dressing on the side (blue cheese, Greek, roasted garlic-chipotle or herb vinaigrette). v
The $7 Lunch Specials available on particular days include:
Monday - Chalupa - Black beans, lettuce, tomato, sweet peppers,red onion and shredded cheese layered in a crisp flour tortilla bowl and dressed with Cantina salsa and guacamole. Topped with your choice of grilled chicken breast, shrimp or tempeh. v, gf (no flour tortilla)
Tuesday - Spicy Sopa Seca - Layers of corn tortillas, chicken or black beans, cheese and spicy salsa ranchera, all baked together, then ladled with more salsa and garnished with lettuce, tomato and a dollop of sour cream. v, gf
Wednesday - BBQ Pita Sandwich - Pita wrapped around your choice of chicken, shredded beef or tempeh with BBQ sauce and cole slaw, served with fresh-cut fries. vv, gf (no pita)
Thursday - Quesadilla - Crisp flour tortillas with melted jack & cheddar cheese and a side of Cantina salse, plus your choice of chicken, shredded beef, shrimp, tempeh or a side of guacamole. v
Friday - Burrito - Soft flour tortilla filled with black beans, Spanish brown rice and cheese, topped with Cantina salsa and sour cream, then garnished with shredded lettuce and jicama-radish slaw. v
Dinner is served Monday - Thursday from 5:00 p.m. until 9:30 p.m., Friday - Saturday from 5:00 p.m. until 10:00 p.m., and Sunday Supper from 4:00 p.m. until 8:00 p.m. In addition to this regular dinner menu, special dinner selections are offered most Friday and Saturday evenings. These specials use the best seasonal and local products available. One only needs to ask and the gluten-free specials are identified. Often it only requires substituting say corn tortillas for pita to change the dinner to gluten-free.
My favorites are the lunch Rotisserie Chicken - 1/4 dark (leg and thigh) with southwestern grits and Greek and homemade habanero sauce (v, gf), homemade soups (v, gf), the pork chop dinner with garlicy greens and green chile mashed potatoes (gf), and sopa seca (v (with black beans), gf).
All desserts, including homemade ice cream (gf), are made in-house with fresh fruit, unsalted butter, local eggs, quality chocolate and real locally-made vanilla extract. Margaret's serves a rotating list of favorite desserts, including her grandmother's chocolate cake and classic flan (gf).
This restaurant is located in Timberline Shopping Center, just off I-40 exit 266. I think it would be a wonderful find for anyone desiring excellent gluten-free choices.
