Stony Brook University tries to accommodate and has progressed since my freshman year. They started off with only one option and only one person on the staff had knowledge of gluten free. I emailed the nutritionist to try and get more options. Now there are a number of people on the staff who are knowledgeable and more options. They have started making and offering their own gluten free bread for a year now. I think we need every member of the staff to be trained and more of a demand on my campus. I have visited other campuses like University of Pennsylvania where there have a dedicated gluten free section and, while Stony Brook is not on their level yet, I truly hope someday they will be.
