I am a Freshman at Marist College in Poughkeepsie, NY. I knew that my college experience was going to be a little different than the rest of the kids because of Celiac Disease. Food is a major piece of college life, so I knew that I needed a school where I could comfortably eat. Marist College has a dedicated space, My Zone, that is free of the top allergens. Every weekday, there is a hot meal being served for lunch and dinner. There is also pizza, chicken fingers, and french fries available. This was the deciding factor for me, because I knew that there was always something for me to eat. And when I don't feel like eating what is being served, it is super easy to get something personally made for you. Once I made my decision to attend Marist, I sat down with head chef Anthony Legame so he could get to know me better to understand what foods I would want. When we met, he gave me his personal phone number so I could text him any requests I might have. All I have to do is ask for a specific meal at a certain time, and he takes care of the rest. He will tell his kitchen staff, and when I arrive in the dining hall, my meal is ready to go. His staff is very knowledgeable about cross contamination, and they make sure the food they prepare for students with allergies is cooked in a separate area. Coming to Marist was the best decision I made. I could not be happier, because even though I live with Celiac, I do not have to worry about the food I am eating. I am attending college just like everyone else without a problem. Marist College is doing gluten free right!
