In Hilo, the Shipman House B&B asks if there are any allergies or dietary restrictions...when you reserve, and again when you arrive. Gluten Free guests are served dishes similar to what other guests are having, but gluten-free. The owner herself has dietary restrictions and understands the difficulties of eating while traveling, so decided before she ever opened the B&B, that she would try to accommodate other travelers with dietary issues. Often guests find the Gluten Free versions are yummier than what everyone else has. (Don't tell!) Barbara's Gluten Free Macadamia Coffee Cake recipe is posted on Shipman House's website, too, so you can make it anytime. The Rancher's Spoonbread is another Gluten Free favorite. There is always a huge platter of fresh, locally-grown tropical fruits, too.
Breakfast is served buffet-style out on the lanai with views of Hilo Bay and magnificent stands of bamboo and palms. This is the lush, green, rain forest side of Hawaii Island (nicknamed the Big Island), just 30 miles from Hawaii Volcanoes National Park. The owners will recommend excellent area restaurants that are happy to accommodate you, too.
