My 8 year old daughter was diagnosed with celiac disease two years ago. We have curtailed all of our travel because it was so hard to ensure that she could remain gluten free. Our trips have been visiting family and short trips to the beach with precooked meals. In November, we booked a last minute trip to Disney World. We were not sure what to expect and shipped a lot of food to the hotel. What we found in Disney, was amazing. Chef Tim, at the Grand Floridian was amazing. He made sure that my daughters meal with safe (gluten free), healthy and tasted delicious. He exceeded our expactations. He was completely knowledgable about gluten and accidental exposure. We felt safe and my daughter did not feel limited. In fact, we were more comfortable dining in the hotel, then restaurants with gluten-free menus in our area. I highly recommend.
