It was very easy for me to determine gluten content of various foods, and the chefs and servers were aware of gluten concerns. They did provide gf bread in the dining room, but I declined it, as it was very ordinary bread and didn't have the wonderful taste & aroma of the basket of various breads and rolls everyone else was eating. Nothing beats "real" bread! The gourmet dinners always included various choices of salads, soups, entree and desserts that were gf, and everything I had was delicious. In the buffet, the servers behind the counter were able to answer my gluten questions, and, again, there was a large choice of food for me. I did have gf bars & pretzels with me for times off the boat and on the plane.
