This is not a review of a resort but of my visit to the city of Niteroi in Rio. I am a celiac with extreme sensitivity to gluten. The restaurants were great in Niteroi - they were willing to clear an area in their kitchens to prepare a GF meal. The main flour used in Rio comes from a root - manioc - which is naturally GF. Many of their dishes use manioc flour. The trend in Niteroi is pay by the gram buffets but the various dishes are kept separately. The best part of the trip was buying food in the grocery store. Every single packaged food item there is marked with a label if it does or may contain gluten. The label is in Portuguese but once you know what to look for, it is easy to detect. My eating experience was a breeze in this Brasilian city. I definitely recommend Niteroi as a celiac friendly destination!
