These eatery services are VERY dangerous for those with food allergies. There is no Allergy Section for those with food allergies! In fact, there is no safe area to get food to eat. For instance, you have gluten free bread but no safe food/area (toaster, peanut butter, butter, cream cheese) for a safe meal. Who is to say that someone who uses the salad tongs also uses the same tongs to get croutons? Or someone who is allergic to nuts doesn't use the same knife to scoop some butter. Every part of this facility is a cross contamination nightmare, and terrible for those with food allergies.
What really annoyed me was there are no labels identifying what top allergies were used to prepare that meal. I would constantly have to research the meal myself to see if it is normally made with gluten containing products and then guess if I could eat that meal. 99% of the time I would get sick anyway (even if it is gluten free). This has left me only eating 4 things in all of the cafeterias. It is very dissatisfying and unhealthy.
You'd think a food service would be up to date with the latest food conditions and procedures. Even the staff does not know the proper guidelines for a safe meal. The dietitian assured me there was a specific toaster for gluten free individuals, but when I asked the staff about it, they told me to use the regular toaster. A college is not only a food service but a HOME to a thousand people who live on campus, they should learn how to accommodate the people who have threatening alignments which effect their health. It is very dissatisfying, and I will not be living on campus next year because of this reason.

Kean doesn't have any information present to help students who need to maintain a gluten free diet. There is no information online, nor in the cafeterias. However, I did contact disabilities services and they provided me with the dietitian's email. Unfortunately she is not on campus often, and had to wait over a month before I got to meet with her. She did give me emails for the head chef, and manger in the cafe, and they have been very helpful; however, I am still getting sick from hidden sources of gluten. The manager is very patient and answering all of my questions!
On the other hand, almost all of the employees have no idea what "gluten free" is and the strict diets Celiacs have. One employee tried to give me a regular roll when I asked for a gluten free sandwich. I get a lot of confusing looks when I ask for the gluten free bread. I tell most of them where the bread is. It has been very frustrating, and not a very easy process so far.
They do have a small area in the main cafeteria where they keep Udis gluten free bread and two types of muffins, some gluten free rolls, and apparently gluten free cookies (have yet to see any). They do have a separate toaster; however, the employees are not even aware that there is a separate toaster or even where it is.
