Wonderful and elegant dinner in Montefalco,

This was one of the nicest restaurants we dined at on our recent trip to Umbria. It is a rather elegant restaurant, and the food was outstanding. Here, we chose the specialties of the night...and the specialties of the house. There are no gluten free markings on the menu, but like most restaurants in Italy, they understand very well what is in their food -- and how to prepare a safe meal for someone with Celiac. Here they also have gluten free pasta which can be substituted for regular pasta. As a first course, I ordered the pasta special of the day, which was pasta with Sagrantino wine sauce and mushrooms. For my main course, I ordered the house special: a T-bone steak, Florentine style. I never typically order a steak this big, but as it was the specialty of the house, I'm so glad I did. The man in charge of cooking steaks over the open fire in the front of the restaurant came to ask us if we wanted to come see our steaks before he cooked them. We did -- and stayed to watch how he prepped them for cooking. He scored the strip side and then poured a bit of olive oil on them. I ordered it cooked medium rare/medium, and it was perfect. So much flavor. When brought to the table, the server asks what type of salt or other toppings you want on it. I opted for a bit more olive oil and had various salts put on my plat to try, including the famous Sagrantino salt (salt soaked in the region's red wine) and pink Himalayan salt. Everything was perfect, along with the sides of baked potatoes and baked artichoke that a few of us ordered to share. They did have a gluten free dessert: panna cotta, but after this meal, I was too full to eat another bite!
