The Skipper was recommended by our B&B owners. It is about 1.5 miles west of Dingle proper. The Chef is a Frenchman, and the parking lot is small so creativity may be necessary. Upon entering I informed them that I was a celiac and they readily said that pretty much any of the dishes that day could be made gluten free (the menu changes daily and is written on a small blackboard that they put in front of your table). This is a small house with no more than 15 tables between the 2 floors. Ask for a table upstairs by the windows and you get a magnificent view of the bay. I ordered the Hake (a fish that seemed to be pretty popular) in a red pepper sauce. The dinner was excellent, and for dessert the waiter went over the gluten free options on the menu (I had the custard). Dessert was phenomenal too, so good that the Irish couple next to us started a conversation over it. This was one of the culinary highlights of our trip, with excellent service, and I would definitely recommend it. It was good to discover that even most smaller cafes in Ireland had at least some kind of gluten free baked good(s) or pre-packaged snack bar. It was, however, hard to find a gluten free beer until the last day (most places had hard cider). Another nice surprise (for me at least) was that good espresso was readily available throughout. Had a lot of pub grub, which was really nothing to write home about, although nice that they were able to accommodate me. The Kyteler Inn in Kilkenny was established in 1324 (!), and had good music too, so that would be my favorite pub.
