Top Notch Consideration for Gluten And Soy Free dining in Geneva, Illinois,

I was impressed! CPK has teamed up with GIG to produce a totally certified gluten free pizza. They offer 5 pizzas that are certified gluten free. If you'd like (and can tolerate some contamination), you can request any of their pizza combinations on the gluten free crust. (They will not guarantee those to be gluten free though).
After I had eaten my pizza, the chef came out to speak with me. He told me the whole process of CPK working with GIG to develop the gluten free crust, which is made only for CPK, and all of the protocols that were developed for the kitchen to ensure the product never is contaminated! It is awesome. Wish this philosophy would spread to other chains/ restaurants. (I indicated that this is not a gluten free dedicated kitchen because only a small portion of it is. All of the food used to make these gluten free pizzas is stored and prepared in separate gluten free areas; even washed dishes are handled with gloves and stored separately from everything else.)
Our waitress, Jacki, was just as helpful. I told her I was gluten and soy free, and she gave me their gluten free pizza menu and explained the menu to me. After our order was taken to the kitchen, she came back with an allergen packet for each product and showed me that there was soy in the Artchoke and spinach pizza! Who would have thought? Great catch on her part. I suggested that instead of the spinach pesto sauce, could it be made with fresh spinach and the red sauce? And it could!
The pizza was wonderful. Definitely the best crust I have ever had. A little chewy, yet crispy and a very pleasant taste. Not cardboard-y at all.
I highly recommend CPK!
