Reconsider this college if you're gluten free,

I started at Fairfield University in Fall 2012. The end of March my mother and I met with two of the head chefs as well as the VP of student affairs. While the VP had no clue what gluten free was, the two head chefs sounded like they knew what they were talking about, promising that they would combat cross contamination by making everything I ate separately in the back. They also said I could order pizza to take out when I had to go to a departmental meeting where there would be food I couldn't eat and that they would have space for me to store my own salad dressing, since none of their salad dressings were gluten free.

When I arrived in September none of their promises were fulfilled. The head chef who had made all of the promises no longer worked at Fairfield and the chef who was now in charge was not as willing to help. The week before I had to order all of my food by modifying their regular menu, without actually knowing what they could or couldn't do. Ingredients weren't listed so I was never sure if what I was ordering was possible. As a result, they often served me things I didn't ask for and didn't like. I had no other options and would end up leaving hungry. It took twenty minutes for me to get my food, after I could finally get someone's attention, and by that time my friends would be done eating and ready to leave. They also would send me to a communal salad bar to get my salad, which guaranteed cross contamination.

By the end of the first week I was starving and couldn't take it anymore. My mom drove three hours each way just to bring me frozen meals and for the rest of the semester I lived out of my freezer, refusing to make myself sick by eating in the dining hall. I have since transferred out of Fairfield University and strongly advise anyone who is on a gluten-free diet not to attend this school.
