If you are visiting Legoland, do not worry about food intolerances. The cafeteria caters for families who have worries about food allergies. This is a place for children so don't expect restaurant quality meals.

Legoland in California has lots of gluten-free options,

We visited Legoland over Thanksgiving week, and it was very crowded, so once we got into the park, our focus was on the rides and attractions, and not so much exploring our gluten-free food options. However, we knew from other people's recommendations that Legoland has gluten-free options throughout the park, so we were not worried about where or what we would eat when it came time for lunch. Our boys ended up choosing to have burgers from Burger Stop, which offers gluten-free buns as an option. It took a few extra minutes, but we were assured they took great care in avoiding cross-contamination. The bun was very good, due in part to the fact that it was softened from the steam since it was wrapped in foil. Fun Town Hot Dogs also apparently offers gluten-free buns for the hot dogs. I don't believe the fries are gluten-free. There was a terrific salad bar in Funtown Market, but I did not inquire about specific gluten-free items (although almost everything appeared to be gluten-free with the exception of a pasta salad and some marinated items, which I certainly wouldn't recommend eating unless you verify they are gluten-free. Funtown Market also offers Haagen Dazs ice cream in about 10 flavors, most of which were gluten-free (as I know from past experience/contacting the company). Sir Scoops A Lot offers a wide selection of Dreyer's ice cream, most flavors of which are also known to be gluten-free. The Market near the front entrance to the park also is known to have a wide selection of gluten-free snacks. If you visit Legoland's Dining page on their website, you can scroll across the various restaurants, and you'll see that the "gluten-free" button comes up on most of their restaurants.
