After my daughter's diagnosis, the dietician was contacted to help with the transition to a gluten free diet. From the first contact, my daughter was given a personal weekly menu indicating what foods were safe to eat. She was also told that they had specialty gluten free foods that could be prepared for her if she gave the staff a 30 minute lead time. She received weekly personalized menus in her mail box, and this continued during her time in the dorms. The university has strict rules about food prep in the dorm rooms, so we really depended on the dining halls for meals
I also know that there are several food establishments surrounding the university where my daughter can eat with confidence.
I can't imagine what we would have done if we did not have the support of Illinois State University during this major life changing event.
