Eating Gluten Free at Baylor University in Waco, Texas
Baylor University does not have an official gluten free menu but the dining services have been willing to work with me. I met with the supervisors of the dining halls I would be eating at most and they walked through the menus with me. The dining halls have gluten free Chex cereal, gluten free pizza, and gluten free bread. The salad bars are a good option too and they provide gluten free dressing. Cross contamination is an issue but they are trying to educate the staff. I can always get cooked vegetables, fruit, mashed or baked potatoes, and grilled chicken and lunch meat. I eat omelets and stir fry a lot too. If I have a special request for something I ask one of the supervisors and they will get it for me. The chef in my main dining hall bought me a whole bag of gluten free snacks for my dorm at the beginning of the year. The supervisors also know how everything is made so they can tell me if sauces are gluten free. I have a refrigerator in my dorm room to keep some frozen meals I like to eat as well. Eating gluten free at college has turned out easier than I expected. __________________
